- Rinse the peaches, slice in half, remove pits, and dice into roughly 1/2-inch pieces.
- Cut the jalapeño in half lengthwise, remove seeds and membranes for less heat, then finely dice.
- Finely dice the red onion.
- In a mixing bowl, combine diced peaches, jalapeño, onion, chopped cilantro, and optional cherry tomatoes.
- Add fresh lime juice, honey, and sprinkle salt evenly over the mixture.
- Gently toss with a spoon or spatula to avoid crushing the peaches.
- Taste and adjust salt or lime juice if needed.
- Optional: Cover and refrigerate for 30 minutes to allow flavors to meld before serving.
