Ingredients
  

  • 450 g Georgia peaches diced
  • 1 small jalapeño seeded and finely chopped
  • 40 g red onion finely diced
  • 15 g cilantro chopped
  • 30 ml fresh lime juice
  • 7 g honey
  • 3 g salt
  • 75 g cherry tomatoes halved (optional)

Method
 

  1. Rinse the peaches, slice in half, remove pits, and dice into roughly 1/2-inch pieces.
  2. Cut the jalapeño in half lengthwise, remove seeds and membranes for less heat, then finely dice.
  3. Finely dice the red onion.
  4. In a mixing bowl, combine diced peaches, jalapeño, onion, chopped cilantro, and optional cherry tomatoes.
  5. Add fresh lime juice, honey, and sprinkle salt evenly over the mixture.
  6. Gently toss with a spoon or spatula to avoid crushing the peaches.
  7. Taste and adjust salt or lime juice if needed.
  8. Optional: Cover and refrigerate for 30 minutes to allow flavors to meld before serving.

Notes

This salsa is perfect as a dip with tortilla chips or as a topping for grilled meats and fish.
