Ingredients
  

  • 1 tbsp dried basil or 3 tbsp chopped fresh basil, if you prefer
  • 1 tbsp dried oregano Adds an aromatic, earthy flavor to the dressing.
  • 2 tbsp olive oil I recommend Colavita extra virgin for great flavor
  • 1 tbsp balsamic vinegar choose a good-quality aged vinegar for the best taste
  • 1 pinch Pinch of salt Adjust seasoning to your personal preference.
  • 1 pinch Pinch of pepper Freshly ground black pepper enhances the flavor.
  • 0.5 onion large red onion finely chopped to keep the flavor mild
  • 1.5 cup cherry tomatoes quartered for easy bites
  • 8 oz fresh mozzarella small balls halved, or torn into bite-sized pieces
  • 1 cucumber cucumber peeled, lightly scored, and diced into ½-inch pieces

Method
 

  1. In a large bowl, whisk together the olive oil, balsamic vinegar, dried basil, dried oregano, salt, and pepper to create the dressing.
  2. Prepare the vegetables: finely chop the red onion, quarter the cherry tomatoes, and peel, lightly score, and dice the cucumber into ½-inch pieces.
  3. Halve the small fresh mozzarella balls or tear larger pieces into bite-sized chunks.
  4. Add the prepared red onion, cherry tomatoes, cucumber, and mozzarella to the bowl with the dressing. Toss gently to combine all ingredients.
  5. Serve immediately, or chill for 15-30 minutes before serving to allow the flavors to meld.

Notes

This salad is best served fresh. For an extra touch, garnish with fresh basil leaves just before serving. You can also add Kalamata olives for a briny kick.
