- Preheat oven to 325°F. Grease muffin tin or use silicone liners.
- Blend eggs, cottage cheese, salt, and pepper until smooth.
- Stir in shredded cheese and toppings.
- Pour into muffin cups, filling ¾ full.
- Bake 22–28 minutes until just set.
- Cool slightly before removing. Store in fridge or freeze.
