Method
 

  1. Preheat oven to 325°F. Grease muffin tin or use silicone liners.
  2. Blend eggs, cottage cheese, salt, and pepper until smooth.
  3. Stir in shredded cheese and toppings.
  4. Pour into muffin cups, filling ¾ full.
  5. Bake 22–28 minutes until just set.
  6. Cool slightly before removing. Store in fridge or freeze.
