Method
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the egg whites from the yolks, placing them in different bowls.
- Whip the egg whites with cream of tartar until stiff peaks form.
- In another bowl, mix egg yolks with cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil until smooth.
- Gently fold the whipped egg whites into the yolk mixture until combined.
- Drop dollops of the mixture onto prepared baking sheet, shaping them into rounds.
- Bake for 25–30 minutes or until golden brown.
- Let cool on a wire rack before serving.
