Ingredients
  

  • 3 large eggs separated
  • 120 g full-fat cottage cheese
  • 0.25 tsp cream of tartar
  • 8 g almond flour optional
  • 8 g coconut flour optional
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 15 ml olive oil or melted butter
  • 1 tsp sesame seeds or fresh herbs for topping

Method
 

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks, placing them in different bowls.
  3. Whip the egg whites with cream of tartar until stiff peaks form.
  4. In another bowl, mix egg yolks with cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil until smooth.
  5. Gently fold the whipped egg whites into the yolk mixture until combined.
  6. Drop dollops of the mixture onto prepared baking sheet, shaping them into rounds.
  7. Bake for 25–30 minutes or until golden brown.
  8. Let cool on a wire rack before serving.
