- Preheat a Blackstone griddle or a large skillet over medium-high heat for about 3-5 minutes. Add 1 tablespoon of oil and wait for it to shimmer.
- Add the sliced Yukon Gold potatoes and season with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10-12 minutes, stirring occasionally until golden brown.
- Push the potatoes to one side and add another tablespoon of oil. Lay down the sliced smoked sausage in the cleared space and brown for about 5 minutes.
- Introduce the chopped onion, red bell peppers, and zucchini to the mix. Stir well and cook for another 5-7 minutes until the veggies are tender but crisp.
- Taste for seasoning adjustments and add more salt or pepper if needed. Remove from heat and transfer to a serving plate, garnishing with fresh parsley.
