Flavor-Packed Blackstone Cowboy Stir Fry Dinner in Minutes

Ingredients
  

  • 450 g Smoked Sausage or substitute with turkey sausage or vegetarian sausage
  • 300 g Yukon Gold Potatoes can be replaced with pre-cooked or frozen potatoes, or sweet potatoes
  • 300 g Zucchini or substitute with bell peppers or squash
  • 150 g Onion or substitute with carrots or mushrooms
  • 150 g Red Bell Pepper
  • 1 tsp Garlic Powder or use fresh garlic if preferred
  • 1 tsp Onion Powder omit for a milder flavor
  • 1 tsp Smoked Paprika substitute with regular paprika and a touch of chili powder if needed
  • 1 tsp Black Pepper
  • 1 tsp Salt
  • 30 ml Oil for cooking

Equipment

  • Blackstone Griddle
  • Large Skillet

Method
 

  1. Preheat a Blackstone griddle or a large skillet over medium-high heat for about 3-5 minutes. Add 1 tablespoon of oil and wait for it to shimmer.
  2. Add the sliced Yukon Gold potatoes and season with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10-12 minutes, stirring occasionally until golden brown.
  3. Push the potatoes to one side and add another tablespoon of oil. Lay down the sliced smoked sausage in the cleared space and brown for about 5 minutes.
  4. Introduce the chopped onion, red bell peppers, and zucchini to the mix. Stir well and cook for another 5-7 minutes until the veggies are tender but crisp.
  5. Taste for seasoning adjustments and add more salt or pepper if needed. Remove from heat and transfer to a serving plate, garnishing with fresh parsley.
