Ingredients

  • 60 ml olive oil plus more for cooking
  • 240 ml warm water
  • 312 g all purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp garlic powder
  • 0.5 tsp oregano
  • 1 tsp basil
  • 45 g fresh parsley chopped
  • to taste Flaky or kosher salt for garnish

Equipment

  • Skillet

Method

  1. In a large bowl, combine the olive oil and warm water.
  2. In a separate bowl whisk together the flour, baking powder, salt, garlic powder, oregano, and basil.
  3. Add the dry ingredients to the wet ingredients and stir with a spatula until it all begins to come together. Work it with your hands until it forms a smooth dough, about 2-4 minutes.
  4. Dump the dough out onto a lightly floured surface and divide into 4 equal pieces. Roll each piece into a round and cover with saran wrap. Let the dough rest for about 10 minutes.
  5. Roll each piece of dough out into a flat even disk after the resting time.
  6. Heat a medium-sized skillet over medium-high heat. Spread about 1 teaspoon of olive oil on the skillet and place one rolled out flatbread on the pan.
  7. Cook one side until bubbles begin to form, about 2-3 minutes.
  8. Brush the top side of the flatbread with additional olive oil and flip it over, cooking the other side for another 2 minutes.
  9. Once the flatbread has finished cooking, remove it from the skillet and sprinkle it with chopped parsley and flaky salt. Repeat with the remaining rounds of dough.

Notes
