- Pick through crabmeat to remove shells carefully.
- Mix crabmeat, mayonnaise, Dijon, Old Bay, and parsley.
- Add breadcrumbs only if needed to hold shape.
- Shape into golf ball-sized mounds.
- Place on parchment-lined sheet and brush with melted butter.
- Broil 6–8 minutes until golden and crisp.
- Serve hot with lemon wedges, melted butter, or remoulade.
