Ingredients

  • 1 cup crushed graham crackers
  • 3 tbsp unsalted butter melted
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup white chocolate chips melted
  • 1/2 cup fresh strawberries finely chopped
  • Extra strawberries sliced (for garnish)
  • Additional melted white chocolate for drizzle

Method

  1. Set up a mini muffin tin and ensure cream cheese is at room temperature for smooth texture.
  2. Mix crushed graham crackers with melted butter and press firmly into the bottom of each muffin cup to form crusts.
  3. Beat softened cream cheese until smooth, then add sugar and mix until combined. Stir in vanilla extract and melted white chocolate until smooth and creamy.
  4. Gently fold in finely chopped strawberries, keeping fruit pieces intact.
  5. Spoon filling over each crust, filling muffin cups about 3/4 full. Smooth the tops evenly.
  6. Chill for at least 2 hours in the refrigerator until firm.
  7. Top each bite with sliced strawberries and drizzle with melted white chocolate before serving.

Notes

Store bites in an airtight container in the refrigerator for up to 4 days or freeze for up to 1 month. For a healthier twist, use reduced-fat cream cheese or sugar-free white chocolate. Always serve chilled for the best texture.
