Ingredients
  

  • 450 g ground beef Drain excess grease after browning.
  • 1 packet taco seasoning Approximately 1 oz (28g), adjust to taste for desired spiciness.
  • 120 ml water Used to simmer with taco seasoning, ensuring it's well mixed.
  • 280 g diced tomatoes and green chilies Do not drain the can for extra flavor and moisture.
  • 425 g black beans Rinse thoroughly and drain well to remove excess sodium.
  • 425 g corn Drain well before adding to the beef mixture.
  • 8 pieces flour tortillas Cut into bite-sized pieces for easier layering in the casserole.
  • 220 g shredded cheddar cheese Use freshly shredded cheese for the best melting consistency.
Optional Toppings
  • 100 g sour cream Serve a dollop on top for a cool, creamy contrast.
  • 100 g salsa Choose your favorite mild or spicy salsa to complement the flavors.
  • 100 g guacamole Freshly made guacamole adds a rich, avocado flavor.
  • 15 g chopped cilantro Sprinkle fresh cilantro for a bright, herbaceous finish.

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
  3. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
  4. Stir in diced tomatoes and green chilies, black beans, and corn.
  5. In a 9×13 inch baking dish, spread a thin layer of the beef mixture.
  6. Top with a layer of tortilla pieces, then a layer of cheese. Repeat layers until all ingredients are used, ending with a layer of cheese.
  7. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  8. Let stand for a few minutes before serving. Top with your favorite taco toppings.

Notes

This casserole is highly customizable; feel free to add other vegetables like bell peppers or onions, or swap cheddar for a Mexican blend cheese. It's also great for meal prepping and freezes well!
