- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
- Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
- Stir in diced tomatoes and green chilies, black beans, and corn.
- In a 9×13 inch baking dish, spread a thin layer of the beef mixture.
- Top with a layer of tortilla pieces, then a layer of cheese. Repeat layers until all ingredients are used, ending with a layer of cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for a few minutes before serving. Top with your favorite taco toppings.
Notes
This casserole is highly customizable; feel free to add other vegetables like bell peppers or onions, or swap cheddar for a Mexican blend cheese. It's also great for meal prepping and freezes well!
