Ingredients
  

  • 3/4 cup salted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Sprinkles
  • 2 oz cream cheese softened
  • 3 cups powdered sugar sifted
  • 1/4 cup butter softened
  • 2 tbsp milk
  • 1/4 tsp vanilla extract
  • Pink or red gel food coloring optional

Method
 

  1. Preheat oven to 350°F and grease 12 muffin cups well.
  2. Cream butter and sugar 3–4 minutes until light and fluffy.
  3. Add egg, vanilla, and almond extract; mix until smooth.
  4. Whisk flour, baking powder, and baking soda separately, then mix into dough.
  5. Press 2 tbsp dough into each muffin cup, pushing up the sides to form walls.
  6. Bake 12 minutes until edges are lightly golden.
  7. Press centers with a spoon immediately after baking to deepen the cups; cool completely.
  8. For frosting: beat cream cheese and butter smooth; add powdered sugar, milk, and vanilla.
  9. Add food coloring if desired and pipe frosting into cooled cookie cups.
  10. Top with sprinkles before frosting sets.

Notes

Do not overbake—edges should be just lightly golden. Always cool cups fully before piping frosting to maintain shape.
