Method
- Beat cream cheese, sugar, and vanilla until fluffy. Scoop into 24 discs and freeze 30 minutes.
- Cook strawberries with sugar over medium heat 45 minutes until thick. Chill.
- Preheat oven to 350°F (175°C). Whisk flour, baking powder, soda, salt.
- Cream butter and sugar until fluffy, then add egg and vanilla.
- Fold dry ingredients into wet. Divide dough into quarters. Layer jam and fold edges to seal.
- Scoop dough, flatten, place frozen cheesecake disc inside, wrap fully.
- Roll in sugar, bake 11-12 minutes until edges golden. Cool 10 minutes, then transfer to rack.
Notes
Freeze cheesecake discs before assembly. Avoid overmixing jam to maintain pockets of flavor. Slightly underbake for chewy texture.
