Ingredients
  

Cheesecake Filling
  • 6 oz cream cheese cold
  • 3 tbsp granulated sugar
  • 1/2 tsp vanilla extract
Homemade Strawberry Jam
  • 12 oz fresh strawberries hulled and diced
  • 1/4 cup granulated sugar
Cookie Dough
  • 2 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1 cup unsalted butter softened
  • 1 egg
  • 2 tsp vanilla extract
For Rolling
  • 1/4 cup granulated sugar

Method
 

  1. Beat cream cheese, sugar, and vanilla until fluffy. Scoop into 24 discs and freeze 30 minutes.
  2. Cook strawberries with sugar over medium heat 45 minutes until thick. Chill.
  3. Preheat oven to 350°F (175°C). Whisk flour, baking powder, soda, salt.
  4. Cream butter and sugar until fluffy, then add egg and vanilla.
  5. Fold dry ingredients into wet. Divide dough into quarters. Layer jam and fold edges to seal.
  6. Scoop dough, flatten, place frozen cheesecake disc inside, wrap fully.
  7. Roll in sugar, bake 11-12 minutes until edges golden. Cool 10 minutes, then transfer to rack.

Notes

Freeze cheesecake discs before assembly. Avoid overmixing jam to maintain pockets of flavor. Slightly underbake for chewy texture.
