Ingredients
  

  • 1 lb ground beef 80/20 blend
  • Salt and black pepper to taste
  • 4 slices American cheese
  • 4 medium flour tortillas
  • ½ cup shredded iceberg lettuce
  • ¼ cup finely diced white onion
  • Dill pickle slices
  • Optional: sesame seeds for garnish
Big Mac Sauce
  • 1 cup mayonnaise
  • ¼ cup sweet pickle relish
  • 2 tbsp yellow mustard
  • 1 tsp white vinegar
  • tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • tsp white pepper optional

Method
 

  1. In a bowl, whisk together mayonnaise, relish, mustard, vinegar, paprika, onion powder, garlic powder, and white pepper until smooth. Refrigerate for 20 minutes.
  2. Lightly toast tortillas in a dry skillet for 1–2 minutes per side and set aside.
  3. Divide ground beef into 4 loose balls.
  4. Heat a cast iron skillet over medium-high heat until very hot.
  5. Place beef ball in skillet and smash thin with a spatula using parchment paper.
  6. Season with salt and pepper and cook undisturbed for 2 minutes.
  7. Flip patty, top with American cheese, and cook 1–2 minutes until melted.
  8. Spread Big Mac sauce on tortillas, then add lettuce, onion, pickles, and burger patty.
  9. Fold like a taco and serve immediately.

Notes

For the crispiest smash burgers, make sure your skillet is smoking hot before smashing the beef.
