- In a bowl, whisk together mayonnaise, relish, mustard, vinegar, paprika, onion powder, garlic powder, and white pepper until smooth. Refrigerate for 20 minutes.
- Lightly toast tortillas in a dry skillet for 1–2 minutes per side and set aside.
- Divide ground beef into 4 loose balls.
- Heat a cast iron skillet over medium-high heat until very hot.
- Place beef ball in skillet and smash thin with a spatula using parchment paper.
- Season with salt and pepper and cook undisturbed for 2 minutes.
- Flip patty, top with American cheese, and cook 1–2 minutes until melted.
- Spread Big Mac sauce on tortillas, then add lettuce, onion, pickles, and burger patty.
- Fold like a taco and serve immediately.
Notes
For the crispiest smash burgers, make sure your skillet is smoking hot before smashing the beef.
