  • 3 pounds Russet or Yukon Gold potatoes peeled and sliced 1/8 inch thick
  • 2 cups freshly grated cheddar cheese
  • 1 cup freshly grated parmesan cheese
  • 1 tablespoon vegetable shortening or unsalted butter
  • 3 cloves garlic minced
  • 2 cups heavy cream or whipping cream
  • 1 teaspoon salt
  • Freshly ground black pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a 9×13-inch baking dish and keep sliced potatoes in cold water until ready to use.
  2. In a saucepan, melt shortening or butter over medium-high heat. Add garlic and sauté for 30 seconds. Add cream, salt, and pepper, heating until small bubbles form, then remove from heat.
  3. Butter the baking dish. Layer half the potatoes, half the cream mixture, and half the cheeses. Repeat, finishing with remaining cheese on top.
  4. Cover with foil and bake 40 minutes. Uncover and bake an additional 25–35 minutes until golden and tender.
  5. Let rest 5–10 minutes before slicing and serving.

Notes

Uniform slices are key to even cooking. Let the dish rest before cutting for clean slices. For extra flavor, sprinkle fresh thyme or chives before baking.
