Ingredients
  

  • 1 lb chicken sausage
  • ¼ cup chopped onion
  • ¼ cup Parmesan cheese grated
  • ½ cup cheddar cheese grated
  • 2 cups baking mix such as Bisquick
  • cup milk
  • ¼ cup mayonnaise
  • 1 egg
  • ½ tsp hot sauce optional
  • 1 tsp salt
  • Dash of red pepper flakes

Method
 

  1. Preheat oven to 350°F and grease a 9×5-inch loaf pan.
  2. Cook chicken sausage and onion in a skillet over medium-high heat until browned. Drain and cool slightly.
  3. Whisk egg, Parmesan, cheddar, hot sauce, salt, and red pepper flakes together in a large bowl.
  4. Add baking mix, milk, and mayonnaise; stir gently until combined.
  5. Fold in cooled sausage mixture and mix just until evenly distributed.
  6. Pour batter into the loaf pan and bake for 45–50 minutes until golden brown and a toothpick comes out clean.
  7. Cool for 5–10 minutes before slicing and serving.

Notes

For best results, don’t overmix the batter. Drain sausage well to avoid sogginess, and let bread cool briefly before slicing to maintain structure.
