Ingredients
  

  • 1 lb breakfast sausage room temperature
  • 3 cups sharp cheddar cheese freshly shredded
  • 3 cups Bisquick or all-purpose baking mix
  • 8 oz cream cheese optional
  • 1/4 teaspoon red pepper flakes optional
  • 2 green onions finely chopped (optional)

Method
 

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Combine sausage, shredded cheese, and Bisquick in a large bowl until just incorporated. Add cream cheese first if using.
  3. Roll mixture into 1-inch balls using a tablespoon or cookie scoop.
  4. Place balls on baking sheet, spacing 1 inch apart, and bake 18–20 minutes until golden brown.
  5. Let rest 5 minutes before serving to prevent crumbling.

Notes

Use room-temperature sausage and freshly shredded cheese for best texture. Avoid overmixing to keep sausage balls tender.
