Easy Reuben Sliders Recipe

These easy Reuben sliders turn the classic Reuben sandwich into bite-sized party perfection. Hawaiian rolls are layered with corned beef, Swiss cheese, sauerkraut, and Russian dressing, then baked with a buttery onion topping for a crowd-pleasing appetizer ideal for game day or parties.

Ingredients
  

  • 14 ounces canned sauerkraut drained and squeezed dry
  • 2 tablespoons Russian dressing or Thousand Island dressing
  • 12 Hawaiian rolls
  • 8 slices Swiss cheese
  • 1/2 pound deli corned beef thinly sliced
  • 1/2 cup unsalted butter melted
  • tablespoons dried onion soup mix
  • 1/2 teaspoon poppy seeds

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Drain sauerkraut thoroughly and mix with Russian dressing in a bowl.
  3. Slice Hawaiian rolls in half horizontally and place bottom halves in a baking dish.
  4. Layer half of the Swiss cheese over the rolls, followed by corned beef.
  5. Spread sauerkraut mixture evenly over the beef, then top with remaining Swiss cheese.
  6. Place roll tops on and set aside.
  7. Mix melted butter with onion soup mix and poppy seeds.
  8. Brush butter mixture evenly over the tops of the rolls.
  9. Cover with foil and bake for 25 minutes.
  10. Uncover and bake an additional 5 minutes until golden.
  11. Rest briefly, slice into sliders, and serve warm.

Notes

Be sure to squeeze all excess moisture from the sauerkraut to keep the sliders from becoming soggy.
