  • 1 medium Bell peppers Sliced thin for a crisp-tender texture when stir-fried.
  • 1 cup Snow peas Crisp and fresh, add them towards the end to maintain their crunch.
  • 3 stalks Green onions Chopped, reserve some for garnish if desired.
  • 1 tablespoon Soy sauce The savory backbone of the sauce; use low-sodium if preferred.
  • 1 teaspoon Sesame oil Adds a warm, nutty depth to the overall flavor profile.
  • 2 cloves Garlic Minced fresh for the best aromatic flavor.
  • 1 teaspoon Ginger Grated finely to distribute its pungent, fresh taste throughout.
  • 1 tablespoon Brown sugar Balances the saltiness of the soy sauce and adds a hint of sweetness.
  • 1 cup Tofu Optional protein; can substitute with chicken, shrimp, or your preferred protein.
  • 1 teaspoon Chili flakes For heat, adjust the amount to your personal spice preference.
  • 1 tablespoon Sesame seeds Toasted for topping, they add a delightful nutty crunch and garnish.

Equipment

  • Wok
  • Large Skillet
  • Pot

Method

  1. Bring a pot of water to a boil. Add lo mein noodles and cook 3–4 minutes until tender. Drain, then toss with a teaspoon of oil to prevent sticking.
  2. Heat a wok or large skillet over high heat with 1 tablespoon of oil. Add carrots, bell peppers, and snow peas. Stir-fry 2–3 minutes until crisp-tender.
  3. Reduce heat to medium, then add minced garlic and grated ginger. Stir continuously for about 30 seconds until fragrant.
  4. In a small bowl, whisk together soy sauce, sesame oil, and brown sugar until glossy and well combined.
  5. Pour the prepared sauce over the veggies in the wok. Add the cooked noodles back in, tossing constantly for 1–2 minutes until thoroughly coated with the sauce.
  6. Remove from heat, stir in the chopped green onions and your optional protein (tofu or chicken). Garnish with sesame seeds or chili flakes before serving immediately.

Notes

This recipe is highly adaptable; feel free to swap in your favorite vegetables like broccoli, mushrooms, or snap peas. For an extra layer of flavor, consider marinating the tofu or chicken beforehand.
