Method
- Add cottage cheese, peanut butter, honey (or sweetener), vanilla extract, and cocoa powder to a blender or food processor.
- Blend for 1–2 minutes until completely smooth and creamy, scraping down sides as needed.
- Taste and adjust sweetness or cocoa intensity.
- Spoon the mousse evenly into four serving bowls or ramekins.
- Refrigerate for at least 30 minutes to allow the mousse to set.
- Top with whipped cream and chopped peanuts before serving.
Notes
For a keto version, replace honey with erythritol or monk fruit sweetener. If the mousse is too thick, blend in 1–2 tablespoons of milk.
