Ingredients
  

  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cod fillets about 6 oz each
  • 2 tbsp extra-virgin olive oil
  • 1 fresh lemon cut into wedges

Method
 

  1. Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. In a bowl, mix paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper to create the blackened seasoning.
  3. Pat cod fillets completely dry with paper towels. Brush both sides with olive oil.
  4. Generously coat each fillet with the seasoning blend, pressing lightly to help it stick.
  5. Arrange fillets on the baking sheet, leaving 2 inches between each piece.
  6. Bake for 12–15 minutes, until fish flakes easily with a fork and reaches 145°F internal temperature.
  7. Let rest for 2–3 minutes before serving with fresh lemon wedges.

Notes

Use smoked paprika for deeper flavor, or reduce cayenne for a milder version. Cod can be substituted with mahi-mahi or halibut. Leftovers keep 3 days refrigerated or up to 2 months frozen.
