  • 1 teaspoon cream of tartar
  • ¼ teaspoon salt
  • 1 cup unsalted butter room temperature
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon lemon extract
  • 1 tablespoon fresh Meyer lemon juice
  • 1 teaspoon Meyer lemon zest

Method
 

  1. Whisk flour, baking powder, cream of tartar, and salt together; set aside.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, then mix in lemon extract, lemon juice, and zest.
  4. Gradually blend in dry ingredients until just combined.
  5. Cover and chill dough for at least 1 hour.
  6. Preheat oven to 350°F and line baking sheet with parchment paper.
  7. Scoop 1½-inch dough balls onto sheet, spacing 2 inches apart.
  8. Bake 12–15 minutes until edges are golden and centers soft.
  9. Cool 5 minutes on baking sheet, then transfer to wire rack.
