  • 3 small scoops 140g vanilla ice cream
  • 50 ml Irish cream liqueur
  • 50 ml chilled ginger ale
  • Dairy spray cream to top
  • 1 cocktail cherry optional
  • 1 crushed Humbug sweet or 10g crushed candy canes optional garnish
  • Substitutions: Salted caramel or chocolate ice cream club soda instead of ginger ale, or coconut whipped cream for dairy-free option.

Method
 

  1. Chill the glass: Place a tall glass in the freezer for 2–3 minutes.
  2. Add ice cream: Scoop 3 small scoops of vanilla ice cream into the chilled glass.
  3. Pour liqueur: Slowly pour 50ml Irish cream liqueur over the ice cream to create marbled streams.
  4. Add fizz: Gently pour 50ml chilled ginger ale over the top.
  5. Top and garnish: Crown with whipped cream, a cherry, and crushed candy for a festive finish.
  6. Serve immediately: Provide a straw and spoon for best enjoyment.

Notes

This float is best enjoyed immediately, but you can pre-chill glasses and pre-measure ingredients to save time when entertaining.
