Ingredients
  

For the Dough:
  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast 1 packet
  • 1/2 tsp salt
  • 3/4 cup warm milk 110°F
  • 1/4 cup unsalted butter melted
  • 1 large egg
For the Cinnamon Filling:
  • 1/2 cup packed brown sugar
  • 2 tbsp ground cinnamon
  • 2 tbsp unsalted butter softened
For the Optional Glaze:
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Method
 

  1. Make the Dough: In a large bowl, combine flour, sugar, yeast, and salt. Add warm milk, melted butter, and egg. Mix into a shaggy dough, then knead 8–10 minutes until smooth and elastic. Let rise 1 hour until doubled.
  2. Prepare the Filling: Mix brown sugar and cinnamon in a bowl. Set aside.
  3. Shape the Bread: Roll dough into a 9×15-inch rectangle. Spread softened butter over dough, leaving a 1-inch border. Sprinkle cinnamon-sugar mixture evenly. Roll tightly from the short end and place seam-side down in a greased 9×5-inch loaf pan.
  4. Second Rise: Let rise for 30 minutes until puffy.
  5. Bake: Preheat oven to 350°F. Bake 30–35 minutes until golden and internal temperature reaches 190°F. Cool 10 minutes in pan, then transfer to wire rack.
  6. Optional Glaze: Whisk powdered sugar, milk, and vanilla; drizzle over cooled bread.

Notes

For stronger cinnamon flavor, toast your cinnamon for 30 seconds before using. Leave a 1-inch border when spreading filling to prevent leaking. Allow bread to cool fully before slicing to avoid a gummy texture.
