  • 1 lb ground beef 80/20 blend recommended
  • 4 cups beef broth low-sodium preferred
Fresh Vegetables
  • 2 cups diced potatoes Yukon Gold or Russet
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion chopped
  • 2 garlic cloves minced
Additional Flavor Components
  • 1 can diced tomatoes 14.5 oz, fire-roasted optional
  • 1 cup corn kernels fresh or frozen
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp fresh parsley chopped (for garnish)
  • Substitutions: Ground turkey chicken, or plant-based protein for beef; vegetable broth for beef broth; sweet potatoes for white potatoes.

Method
 

  1. Brown the beef: In a large pot, cook ground beef 6–8 minutes until no longer pink. Drain excess fat, leaving 1 tbsp for flavor.
  2. Sauté aromatics: Add onion, garlic, carrots, and celery. Cook 5 minutes until softened and fragrant.
  3. Add remaining ingredients: Stir in tomatoes, potatoes, corn, Italian seasoning, and broth. Mix well.
  4. Simmer: Bring to a boil, then reduce heat. Simmer uncovered 25–30 minutes until potatoes are fork-tender.
  5. Finish: Season with salt and pepper. Garnish with fresh parsley before serving.

Notes

This hamburger soup is hearty enough to be served as a main dish with bread or salad. It also freezes beautifully, making it perfect for meal prep.
