Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2 cups cooked white rice
  • 1 cup sour cream
  • 1 cup nacho cheese sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tbsp chipotle sauce
  • 4 large flour tortillas
  • 2 tbsp butter or oil for grilling

Method
 

  1. Brown ground beef in a skillet over medium heat until fully cooked and no longer pink.
  2. Drain excess fat, add taco seasoning with a splash of water, and simmer for 5 minutes.
  3. Warm tortillas in a skillet or microwave until soft and pliable.
  4. Layer rice, seasoned beef, nacho cheese sauce, sour cream, and chipotle sauce onto each tortilla.
  5. Top generously with shredded cheddar and mozzarella cheese.
  6. Wrap tortillas tightly into burritos, folding in sides.
  7. Heat butter or oil in a nonstick skillet over medium heat.
  8. Place burritos seam-side down and grill until golden and crispy, about 3–4 minutes per side.
  9. Remove from skillet, rest for 1 minute, slice in half, and serve hot.

Notes

Do not overfill the burritos or the cheese may leak while grilling. Always use medium heat to prevent burning the cheese exterior.
