Ingredients
  

  • 1 pound lean ground beef 85/15 recommended
  • 1 medium yellow onion finely diced
  • 2 cloves garlic minced
  • 1 tablespoon taco seasoning
  • 2 cups red enchilada sauce
  • 8 flour or corn tortillas 8-inch size
  • 2 cups shredded cheese divided
  • Optional: 1/2 cup corn kernels
  • Optional: 4 ounces diced green chiles
  • Optional: 1/4 cup fresh cilantro

Method
 

  1. Preheat oven to 375°F.
  2. Cook ground beef and diced onions in a skillet for 5–7 minutes until beef is browned and onions are translucent. Drain excess fat.
  3. Add garlic and taco seasoning; cook 1 minute. Optional: stir in 1/2 cup enchilada sauce and simmer 2–3 minutes.
  4. Warm tortillas in the microwave for 30–45 seconds under a damp paper towel.
  5. Spread 1/2 cup enchilada sauce on the bottom of a 9x13-inch baking dish.
  6. Place 1/3 cup beef mixture into each tortilla, add 1 tablespoon cheese, roll tightly, and place seam-side down in dish.
  7. Pour remaining sauce over enchiladas and top with remaining cheese.
  8. Bake uncovered for 20–25 minutes until bubbly and golden.
  9. Rest 5 minutes before serving.

Notes

Warm tortillas before rolling to prevent cracking. Add vegetables like zucchini or bell peppers to the beef mixture for extra nutrition.
