These easy St. Patrick’s Day cookies are made with just 4 simple ingredients and come together in under an hour. Vibrant green, crackly on the outside, and soft on the inside, they’re the perfect festive treat for March 17th celebrations.

Ingredients
  

  • 1 box 15.25 oz white cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/4 tsp Kelly green gel food coloring
  • 3 tbsp granulated sugar
  • 6 tbsp powdered sugar

Method
 

  1. In a large bowl, mix the cake mix, eggs, and vegetable oil until a sticky dough forms.
  2. Add green gel food coloring and mix until evenly colored.
  3. Cover the dough and refrigerate for 30 minutes.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Place granulated sugar in one bowl and powdered sugar in another.
  6. Scoop tablespoon-sized portions of dough and roll into balls.
  7. Roll each ball in granulated sugar, then coat in powdered sugar.
  8. Place cookies 2 inches apart on the baking sheet.
  9. Bake for 9–12 minutes until tops are crackled and edges are set.
  10. Cool on the baking sheet briefly, then transfer to a wire rack.

Notes

Chilling the dough is key to prevent spreading. Do not overbake—cookies will continue to set as they cool.
