Method
- Heat olive oil in a large skillet and cook Italian sausage until browned; remove and set aside.
- Add minced garlic to the skillet and sauté 1 minute.
- Pour in heavy cream and bring to a gentle simmer, then stir in Parmesan until smooth.
- Season sauce with salt, pepper, and red pepper flakes.
- Cook tortellini in salted boiling water; add broccoli during the last 2–3 minutes. Drain, reserving 1/2 cup pasta water.
- Combine tortellini, broccoli, sausage, and sauce in skillet. Add pasta water as needed to adjust consistency.
- Simmer 1–2 minutes and serve warm.
Notes
Use freshly grated Parmesan for the smoothest sauce. Reserve pasta water to thin the sauce without losing flavor.
