Ingredients
  

  • 1 20-ounce package cheese tortellini
  • 1 pound Italian sausage mild or spicy
  • 3 cups broccoli florets
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Heat olive oil in a large skillet and cook Italian sausage until browned; remove and set aside.
  2. Add minced garlic to the skillet and sauté 1 minute.
  3. Pour in heavy cream and bring to a gentle simmer, then stir in Parmesan until smooth.
  4. Season sauce with salt, pepper, and red pepper flakes.
  5. Cook tortellini in salted boiling water; add broccoli during the last 2–3 minutes. Drain, reserving 1/2 cup pasta water.
  6. Combine tortellini, broccoli, sausage, and sauce in skillet. Add pasta water as needed to adjust consistency.
  7. Simmer 1–2 minutes and serve warm.

Notes

Use freshly grated Parmesan for the smoothest sauce. Reserve pasta water to thin the sauce without losing flavor.
