  • g chocolate kisses unwrapped and ready to press into warm cookies

Method
 

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, beat butter and sugar together until light and fluffy.
  3. Mix in the egg and vanilla.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until dough forms.
  6. Scoop dough into 1-inch balls, then roll each in pastel sanding sugar.
  7. Place balls on baking sheet, a couple inches apart.
  8. Bake for 8-10 minutes, until the edges are just set (don’t overbake—soft cookies are the goal).
  9. Remove from oven and immediately press a chocolate kiss into the center of each cookie.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Don't overbake these cookies; they are meant to be soft and chewy. Feel free to experiment with different types of chocolate or sprinkles for other occasions.
