Ingredients
  

  • 6 large eggs
  • 1 ripe avocado or 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tbsp Greek yogurt or sour cream optional
  • 1 tbsp finely chopped chives or parsley
  • Salt and pepper to taste
  • Paprika or chili flakes
  • Chopped red bell pepper or pimentos
  • Yellow bell pepper or cheese
  • Fresh dill or parsley

Method
 

  1. Boil eggs, then cool in an ice bath and peel.
  2. Slice eggs in half and remove yolks.
  3. Mash yolks with avocado, mustard, lemon juice, salt, pepper, and yogurt until smooth.
  4. Fold in chopped herbs.
  5. Transfer filling to a piping bag fitted with a star tip.
  6. Pipe filling into egg whites, creating a tree-shaped swirl.
  7. Decorate with paprika, red pepper pieces, and yellow bell pepper stars.
  8. Chill for 15 minutes before serving.

Notes

Chill the filling before piping for firmer, well-defined Christmas tree shapes.
