- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- In a bowl, whisk flour, sugar, baking powder, and salt.
- In another bowl, mix milk, egg, and melted butter until smooth.
- Gently fold wet ingredients into dry; stop at lumps.
- Fold in chocolate chips or fruit.
- Spoon batter 2/3 full into mini muffin cups.
- Bake 10-12 minutes until golden and toothpick-clean.
- Cool 5 minutes in tin, then transfer to cooling rack.
Notes
For extra crisp edges, use a toothpick to test doneness and rotate tin halfway. Freeze individually for grab-and-go breakfasts.
