Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk whole or 2%
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup chocolate chips or fresh fruit optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, egg, and melted butter until smooth.
  4. Gently fold wet ingredients into dry; stop at lumps.
  5. Fold in chocolate chips or fruit.
  6. Spoon batter 2/3 full into mini muffin cups.
  7. Bake 10-12 minutes until golden and toothpick-clean.
  8. Cool 5 minutes in tin, then transfer to cooling rack.

Notes

For extra crisp edges, use a toothpick to test doneness and rotate tin halfway. Freeze individually for grab-and-go breakfasts.
