Ingredients
  

  • 1 cup pitted Medjool dates
  • 1/2 cup water
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 cup rolled oats or almond flour
  • 1/2 cup peanut butter or almond butter
  • 1/2 cup roasted peanuts or almonds
  • 1 cup dark chocolate chips melted
  • Optional: cinnamon or coconut flakes for garnish

Method
 

  1. Soak dates in warm water for 10-15 minutes until soft.
  2. Blend soaked dates with water, vanilla, and salt until smooth to form date caramel.
  3. Mix oats or almond flour with peanut butter to make the nougat base, then press into a lined 8x8-inch pan.
  4. Spread the date caramel over the nougat base, then sprinkle peanuts evenly on top and press lightly.
  5. Melt dark chocolate chips and pour over the top, spreading evenly.
  6. Chill in the refrigerator for 30 minutes until set.
  7. Slice into 12 bars and enjoy! Store chilled or frozen.

Notes

Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months. For nut-free versions, use sunflower seed butter and pumpkin seeds.
