Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 2 lbs Yukon Gold potatoes peeled & cubed
  • 1 large onion chopped
  • 8 cloves garlic minced
  • 1/4 cup olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup unsalted butter
  • 1/4 cup beef broth
  • 2 tbsp fresh parsley chopped
  • 1 tbsp cornstarch
  • 2 tbsp cold water

Method
 

  1. Heat olive oil in skillet, sear beef cubes in batches until browned (2-3 min per side).
  2. Add onion to skillet, cook 5 min, then add half the garlic and sauté 1 min.
  3. Transfer beef, onion, garlic, and potatoes to crockpot.
  4. Season with Italian seasoning, paprika, salt, and pepper. Toss to coat evenly.
  5. In saucepan, melt butter. Add remaining garlic and cook 1 min until fragrant.
  6. Add beef broth. Whisk cornstarch with cold water, stir into sauce until thickened.
  7. Pour sauce over crockpot ingredients. Cover and cook on low 6–8 hrs or high 3–4 hrs.
  8. Stir in parsley before serving. Adjust seasonings to taste.

Notes

Use Yukon Gold or red potatoes for best texture. For lighter version, replace half the butter with olive oil and add vegetables like carrots or green beans.
