Ingredients
  

  • 4 cups russet potatoes peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley finely chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika or chili flakes optional
  • 2 –3 slices bacon cooked and crumbled (optional)
  • 1 cup panko breadcrumbs
  • 1/4 cup unsalted butter softened
  • 2 cloves garlic minced
  • 2 large eggs beaten
  • 1 cup all-purpose flour
  • Oil for frying or baking spray

Method
 

  1. Boil diced potatoes in salted water until fork-tender, then drain well.
  2. Mash potatoes while warm and mix with cheddar, Parmesan, parsley, salt, pepper, paprika, and bacon.
  3. Let mixture cool slightly, then shape into golf ball-sized rounds.
  4. Insert a small cube of cheese into the center of each ball and seal.
  5. Roll balls in flour, then egg, then breadcrumbs.
  6. Mix butter with garlic and brush over coated balls.
  7. Bake at 400°F (200°C) for 20–25 minutes until golden and crispy.
  8. Serve hot with ranch or marinara sauce.

Notes

For best results, chill shaped bombs for 10 minutes before baking to help them hold their shape and prevent cheese leakage.
