Ingredients
  

  • 1 sheet puff pastry thawed
  • 4 oz brie cheese cut into 12 cubes
  • ½ cup cranberry sauce
  • 2 tbsp candied pecans chopped (optional)
  • Fresh rosemary sprigs

Method
 

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  2. Roll out the puff pastry on a floured surface and cut into 12 equal squares.
  3. Place each pastry square into the muffin cups, pressing gently to form cups.
  4. Add one cube of brie to each cup, then top with a spoonful of cranberry sauce.
  5. Sprinkle candied pecans over each bite.
  6. Bake 15–18 minutes, until pastry is golden and brie is melted.
  7. Cool for 5 minutes, then garnish with rosemary sprigs and serve warm.

Notes

To make ahead, assemble and refrigerate for up to 1 hour before baking. Freeze unbaked bites for up to 3 months and bake straight from frozen at 300°F until warmed through.
