- Preheat your oven to 375°F (190°C) and grease a muffin tin or use silicone muffin liners.
- In a large mixing bowl, whisk together the eggs and cottage cheese until smooth.
- Stir in the shredded cheese, diced bell peppers, and chopped spinach. Add salt and pepper to taste.
- Using a ladle or measuring cup, pour the egg mixture evenly into each muffin cup, filling them about 2/3 full.
- Place your muffin tin in the preheated oven and bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
- Allow them to cool for a few minutes in the muffin tin before removing them. Serve warm or at room temperature!
