Ingredients
  

  • 6 large eggs
  • 240 g cottage cheese
  • 100 g shredded cheese
  • 75 g diced bell peppers
  • 75 g chopped spinach
  • 1 tsp salt
  • 1 tsp pepper

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or use silicone muffin liners.
  2. In a large mixing bowl, whisk together the eggs and cottage cheese until smooth.
  3. Stir in the shredded cheese, diced bell peppers, and chopped spinach. Add salt and pepper to taste.
  4. Using a ladle or measuring cup, pour the egg mixture evenly into each muffin cup, filling them about 2/3 full.
  5. Place your muffin tin in the preheated oven and bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
  6. Allow them to cool for a few minutes in the muffin tin before removing them. Serve warm or at room temperature!

These egg bites are great for meal prep. You can store them in the fridge for a quick breakfast or snack throughout the week.
