Ingredients
  

  • 6 cups cubed day-old bread approx. 300g
  • 2 medium apples peeled and diced (approx. 300g)
  • 1/2 cup granulated sugar 100g
  • 1/4 cup brown sugar 50g
  • 1 tsp ground cinnamon 5g
  • 1/4 tsp ground nutmeg 1g
  • 2 cups milk 480ml
  • 3 large eggs approx. 150g
  • 1 tsp vanilla extract 5ml
  • 1/4 cup unsalted butter melted (56g)
  • Optional Glaze: 1/2 cup powdered sugar 60g, 1–2 tbsp milk (15–30ml), 1/4 tsp vanilla extract (1ml)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. In a large bowl, combine cubed bread and diced apples.
  3. In another bowl, whisk granulated sugar, brown sugar, cinnamon, nutmeg, milk, eggs, vanilla, and melted butter to create the custard.
  4. Pour custard over bread and apples. Stir gently to coat evenly and let sit for 10 minutes.
  5. Transfer to prepared baking dish and bake 45–50 minutes until top is golden and center is set.
  6. Optional glaze: whisk powdered sugar, milk, and vanilla until smooth and drizzle over warm pudding.
  7. Let cool 5 minutes before serving.

Notes

Use sturdy bread like brioche or challah to avoid sogginess. Allow the mixture to rest before baking so the custard fully absorbs. Avoid overbaking to keep the texture creamy and tender.
