Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning for chicken
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 1 large yellow onion finely diced
  • 2 stalks celery finely diced
  • 1 large green bell pepper finely diced
  • 4-5 garlic cloves minced
  • 6 cups low-sodium chicken broth
  • 2 tbsp Cajun seasoning for soup
  • 1 tsp smoked paprika
  • 1 cup heavy cream

Method
 

  1. Season chicken with Cajun seasoning, salt, and pepper.
  2. Dice onion, celery, and green bell pepper.
  3. Mince garlic and combine spices in a small bowl.
  4. Sear chicken in olive oil until browned; set aside.
  5. Add butter and flour to pot to create a golden roux.
  6. Add Holy Trinity vegetables and sauté until softened.
  7. Pour in broth, spices, and return chicken to pot; simmer.
  8. Remove from heat and stir in heavy cream.

Notes

For deeper flavor, add fire-roasted tomatoes or adjust Cajun seasoning to taste.
