Ingredients
  

  • 1 medium cauliflower head cut into florets
  • 4 large flour tortillas or gluten-free
  • 1 cup mixed baby greens
  • 3 tablespoons hot sauce
  • 2 tablespoons unsalted or vegan butter melted
  • 1 tablespoon white vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 cup ranch dressing vegan or regular
  • 1/2 cup shredded cheddar cheese or vegan cheese optional
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and pepper, then roast 20–25 minutes until crispy.
  2. Mix hot sauce, melted butter, vinegar, and garlic powder in a small bowl to create buffalo sauce.
  3. Toss roasted cauliflower with buffalo sauce until evenly coated.
  4. Lay tortillas flat and spread a thin layer of ranch dressing down the center.
  5. Add mixed greens, buffalo cauliflower, and optional cheese.
  6. Roll tightly, folding in the sides to secure the wrap.
