Ingredients
  

  • 1 15 oz can black beans, drained and rinsed
  • 2 large eggs or 2 flax eggs for vegan version
  • 1/3 cup melted coconut oil
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips
  • Extra chocolate chips for topping optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment.
  2. Blend black beans, eggs, coconut oil, cocoa powder, sugar, vanilla, baking powder, and salt in a blender for 60–90 seconds until smooth.
  3. Transfer batter to a bowl and fold in chocolate chips.
  4. Spread batter into pan and smooth the top. Add optional extra chips.
  5. Bake 22–25 minutes, until a toothpick comes out with moist crumbs.
  6. Cool 30 minutes before lifting from pan and slicing.

Notes

Rinse beans thoroughly to avoid gumminess—this is the key to perfect texture.
