Ingredients
  

  • 4 –6 large bell peppers
  • 1 lb lean ground beef 90/10 or leaner
  • 1 small onion chopped
  • 2 –3 cloves garlic minced
  • 1 14–15 oz can diced or crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup cooked rice or cauliflower rice
  • 1 –2 teaspoons dried oregano or Italian seasoning
  • Salt and black pepper to taste
  • 1 cup shredded cheese mozzarella, cheddar, or Monterey Jack
  • 1 –2 tablespoons olive oil
  • Fresh parsley or cilantro for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Slice bell peppers in half lengthwise and remove seeds and membranes.
  3. Place peppers cut-side down in a baking dish and bake for 10 minutes.
  4. Heat olive oil in a skillet over medium heat and sauté onion until soft.
  5. Add garlic and cook for 1 minute until fragrant.
  6. Add ground beef and cook until browned, breaking it apart.
  7. Stir in tomatoes, tomato paste, rice, seasoning, salt, and pepper.
  8. Remove peppers from oven, flip upright, and fill with beef mixture.
  9. Top each pepper with shredded cheese.
  10. Cover loosely with foil and bake for 15 minutes.
  11. Uncover and bake another 10–15 minutes until cheese is melted.
  12. Garnish with fresh herbs and serve.

Notes

For a low-carb version, substitute rice with cauliflower rice. Ground turkey may be used instead of beef. Drain tomatoes slightly to avoid excess liquid.
