Ingredients
  

  • 1 cup mashed ripe bananas about 2–3 medium bananas
  • ½ cup unsalted butter melted
  • 1 cup light brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon optional
  • ½ cup chopped walnuts or pecans optional
Optional Glaze:
  • 2 tbsp unsalted butter
  • 1 cup powdered sugar
  • 1 –2 tbsp milk
  • ½ tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, whisk melted butter and brown sugar until smooth. Add eggs, vanilla, and mashed bananas, mixing until combined.
  3. In a separate bowl, whisk flour, baking powder, baking soda, salt, and cinnamon. Fold dry ingredients into wet until just combined. Add nuts if desired.
  4. Spread batter evenly in the pan. Bake for 25–30 minutes, or until a toothpick comes out with a few moist crumbs.
  5. Cool for 15 minutes before adding glaze.
  6. For the glaze, melt butter in a small saucepan, remove from heat, then whisk in powdered sugar, milk, and vanilla until smooth. Drizzle over cooled brownies.
  7. Cut into squares and enjoy warm or at room temperature.

Notes

For gluten-free banana bread brownies, use a 1:1 gluten-free flour blend. Replace eggs with flax eggs for a vegan version. Add chocolate chips for extra indulgence or use coconut oil for a dairy-free option.
