Ingredients
  

  • 2 salmon fillets 6 oz each
  • Sea salt to taste
  • Fresh ground black pepper to taste
  • 300 g 10 oz spinach, thawed and well drained
  • 1 medium onion thinly sliced
  • 2 garlic cloves minced
  • 200 g 7 oz sour cream or Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 150 g 5 oz mozzarella cheese, shredded or sliced

Method
 

  1. Preheat oven to 175°C (347°F) and lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat and sauté onions until translucent.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in spinach and cook for 2–3 minutes until heated through and moisture evaporates.
  5. Remove from heat and mix in sour cream or Greek yogurt until creamy.
  6. Pat salmon fillets dry and season with salt and pepper.
  7. Optional: sear salmon in a hot skillet for 2 minutes per side.
  8. Place salmon in baking dish and spread spinach mixture evenly on top.
  9. Top with mozzarella cheese.
  10. Bake for 15–20 minutes until salmon flakes easily and cheese is golden and bubbly.
  11. Rest for 2 minutes before serving.

Notes

Make sure spinach is thoroughly drained to prevent excess moisture. For lighter results, use Greek yogurt and part-skim mozzarella.
