Ingredients
  

  • 1 lb fresh salmon skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh parsley chopped
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 garlic clove minced
  • Water as needed for thinning

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, combine salmon, breadcrumbs, Parmesan, egg, parsley, garlic, lemon juice, salt, and pepper.
  3. Gently mix until just combined.
  4. Shape mixture into golf ball-sized meatballs and place on the baking sheet.
  5. Bake for 15–18 minutes, flipping halfway, until cooked through.
  6. Blend avocado, Greek yogurt, lime juice, garlic, salt, pepper, and water until smooth.
  7. Serve salmon meatballs warm with creamy avocado sauce.

Notes

Avoid overmixing the salmon mixture to keep meatballs tender. Store avocado sauce separately to prevent browning.
