Ingredients
  

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup milk or cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons grated Parmesan or shredded cheddar
  • 1 tablespoon chopped fresh herbs
  • 1/2 cup diced vegetables
  • 1/4 cup cooked bacon bits or diced ham optional
  • 1/4 cup shredded cheese for topping

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease ramekins, muffin tin, or a small baking dish.
  3. In a bowl, whisk together eggs, cottage cheese, milk, salt, pepper, and garlic powder until smooth.
  4. Fold in herbs, vegetables, and optional proteins.
  5. Pour mixture evenly into prepared dish.
  6. Top with shredded cheese.
  7. Bake for 20–25 minutes until just set and lightly golden.
  8. Remove from oven and let rest 5–7 minutes.
  9. Serve warm.

Notes

Do not overbake. The center should jiggle slightly when removed from the oven, as it will continue cooking while resting.
