Ingredients
  

  • 2 medium baking apples peeled and chopped
  • ½ cup light brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 large egg room temperature
  • cup white granulated sugar
  • ¼ cup vegetable oil
  • ¼ cup full-fat sour cream
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp kosher salt
For the Vanilla Glaze:
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 3 tbsp milk

Method
 

  1. Preheat oven to 350°F and grease a loaf pan with nonstick spray.
  2. In a bowl, toss chopped apples with brown sugar, cinnamon, and ginger. Set aside.
  3. In a large bowl, whisk egg, granulated sugar, oil, sour cream, and vanilla until smooth.
  4. In another bowl, mix flour, baking soda, and salt. Add to wet mixture and stir until just combined.
  5. Fold in ¾ of the apple mixture gently to avoid overmixing.
  6. Pour batter into prepared pan and top with remaining apples. Lightly press them into the surface.
  7. Bake for 50–55 minutes or until a toothpick comes out with moist crumbs.
  8. Cool in pan for 30 minutes. Mix glaze ingredients and drizzle over cooled bread before serving.

Notes

Cut apple pieces uniformly and avoid overmixing for a tender crumb. Let the bread cool fully before glazing for best results.
