Method
- Peel and cut 1 pound (450g) of carrots into uniform sticks or rounds. This should take about 5 minutes.
- Place 2 tablespoons (30g) of unsalted butter in a large skillet over medium heat. Let it melt gently without browning, about 2 minutes.
- Toss the carrot pieces into the melted butter. Stir to coat evenly. Cook for 8-10 minutes, stirring occasionally, until the carrots start to soften but still have a slight crunch.
- Drizzle 2 tablespoons (30ml) of honey over the carrots. Stir quickly to coat them with the honey and butter mixture. Cook for another 2-3 minutes, stirring often to prevent burning.
- Sprinkle ½ teaspoon (2.5g) salt, ¼ teaspoon cinnamon (optional), and a few twists of freshly ground black pepper. Stir once more to combine all the flavors.
- Remove from heat. If desired, sprinkle chopped fresh parsley over the top. Serve warm.
