Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat softened butter and sugar until light and fluffy (2–3 mins).
  3. Mix in the egg and vanilla extract until well combined.
  4. Add the flavored Jello mix and blend until the color is uniform.
  5. In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients.
  6. Optionally fold in sprinkles, chocolate chips, or almond extract.
  7. Wrap dough in plastic and refrigerate for at least 30 minutes.
  8. Scoop chilled dough into balls and place on parchment-lined baking sheet.
  9. Bake for 10–12 minutes or until edges are set.
  10. Let cool on the sheet for 5 minutes, then transfer to a wire rack.
  11. If desired, drizzle cooled cookies with icing made from powdered sugar, milk, and food coloring.
