- Preheat oven to 350°F (175°C).
- In a large bowl, beat softened butter and sugar until light and fluffy (2–3 mins).
- Mix in the egg and vanilla extract until well combined.
- Add the flavored Jello mix and blend until the color is uniform.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients.
- Optionally fold in sprinkles, chocolate chips, or almond extract.
- Wrap dough in plastic and refrigerate for at least 30 minutes.
- Scoop chilled dough into balls and place on parchment-lined baking sheet.
- Bake for 10–12 minutes or until edges are set.
- Let cool on the sheet for 5 minutes, then transfer to a wire rack.
- If desired, drizzle cooled cookies with icing made from powdered sugar, milk, and food coloring.
