Method
 

  1. Gather all ingredients and prepare your workspace. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a microwave-safe bowl, melt the white chocolate chips. Microwave in 20-30 second intervals, stirring until smooth.
  3. Add the peanut butter to the melted white chocolate and stir until smooth and well-combined.
  4. Stir in the honey until thoroughly mixed.
  5. Add the vanilla extract and stir to incorporate evenly.
  6. Gently fold in the pretzel pieces, ensuring they are coated with the chocolate mixture.
  7. Add the shredded coconut and mini marshmallows, mixing carefully until well distributed.
  8. Gently fold in the pastel candy-coated chocolate pieces, taking care not to break them.
  9. Scoop small portions of the mixture onto the prepared baking sheet using a spoon or cookie scoop.
  10. Gently press each portion into a small mound or round shape.
  11. Allow the snacks to set at room temperature for 30 minutes, or refrigerate for 10-15 minutes for faster setting.
  12. Once firm, remove from the parchment paper and transfer to a serving platter or airtight container.
  13. Serve immediately or store in an airtight container at room temperature for up to 3 days.
