- Stir in medium-shred coconut and confectioner’s sugar until fully combined.
- Refrigerate mixture for 15 minutes to firm up.
- Divide fine-shred coconut into separate bowls and tint each with a few drops of food coloring, mixing until evenly colored.
- Scoop chilled mixture into small portions and roll into smooth bite-sized balls.
- Roll each ball in colored fine coconut until fully coated.
- Place on a parchment-lined baking sheet.
- Refrigerate for 1 hour until firm and set.
- Serve chilled and enjoy.
