- Dissolve the unflavored gelatin in hot water, stirring until completely smooth with no lumps.
- In a blender, combine strawberries, Greek yogurt, sweetener, and lemon juice. Blend until creamy.
- Pour the dissolved gelatin into the blender and pulse briefly to combine.
- Pour the mixture into molds or a glass dish.
- Refrigerate for 2–3 hours, or until fully set.
Notes
This gelatin is a light and healthy treat. For a thicker consistency, reduce the amount of water slightly, or for a softer set, increase it. Get creative with different fruit purees!
