Ingredients
  

  • 2 tbsp unflavored gelatin Ensure it's unflavored to control sweetness and taste.
  • 1.5 cup strawberries Fresh or frozen berries both work well for this recipe.
  • 0.5 cup plain Greek yogurt Provides a creamy texture and a boost of protein.
  • 2 tbsp honey or stevia Adjust the amount to your desired level of sweetness.
  • 1 cup hot water Use hot, not boiling, water to properly dissolve the gelatin.
  • 1 splash lemon juice A small amount brightens the flavors of the berries.

Method
 

  1. Dissolve the unflavored gelatin in hot water, stirring until completely smooth with no lumps.
  2. In a blender, combine strawberries, Greek yogurt, sweetener, and lemon juice. Blend until creamy.
  3. Pour the dissolved gelatin into the blender and pulse briefly to combine.
  4. Pour the mixture into molds or a glass dish.
  5. Refrigerate for 2–3 hours, or until fully set.

Notes

This gelatin is a light and healthy treat. For a thicker consistency, reduce the amount of water slightly, or for a softer set, increase it. Get creative with different fruit purees!
